In Italy, food is a big deal. It’s like a religion. So we treat our ingredients accordingly. 

Traditional Roman cuisine uses ingredients taken from the countryside and its farmers who use what is local to them, whether vegetable or animal. So we source our ingredients with care from local purveyors as well as Italian producers.  We cook everything ourselves the traditional Italian way, using recipes and secrets from home cooks. 

Our bread uses a secret Trapizzino blend of stone-milled flour and a starter yeast brought over  to the U.S. by Stefano that has  been handed down through eleven generations of Puglia bakers.

We use quality ingredients for our recipes, like organic tomatoes, extra virgin olive oil, organic chicken, Piedmontese beef, and heritage pork. Our stracciatella cheese is made by a local business run by an Italian American family.
